One of my Go-to Recipes

Sorry, I've been MIA, but I haven't been feeling well on some days. Today is one of those days, and I am home sick from work. No, I'm not contagious. I'm going to the doctor on Thursday; so, hopefully, they will figure out what's going on. I'll catch you up on that on Thursday. I made this appetizer last night to take to my JL small group meeting tonight. There are two reasons I made this is: A)it's easy-peazy B)it's a cold appetizer and in cold temps transporting is a breeze. It would be going straight from my work fridge to our hostess' house. This recipe is super easy and is only 7 ingredients. Minimal kitchen experience required. Because we all know, I don't have ninja kitchen skills...yet!

Creamy Spinach and Water Chestnut Dip**

Ingredients:
1 package (10 oz.) baby spinach, chopped  or 1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
1 container (16 oz.) sour cream
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1 package Knorr® Vegetable recipe mix
1 can (8 oz.) water chestnuts, drained and chopped (optional)
3 green onions, chopped (optional)
1 loaf of King's Hawaiian  Sweet Bread

Directions:
Mix spinach, sour cream, mayo, vegetable mix, chestnuts, and onions together.
Cube Hawaiian bread or cut out top to make a bread bowl
Put the mixture in a decorative dish or bread bowl

My Recommendations:
I use the frozen spinach, and it comes out just fine. Also, don't leave out the optional ingredients unless you hate/allergic to onions. The onions give it flavor, and the chestnuts give it a crunch. Even if your can of water chestnuts says they are sliced, you should still chop them. And, the sweet bread is seriously the best thing to serve with this dip. I have tried anything from triscuits to chips to wheat thins to other kinds of bread. The Hawaiian is THE best. Lastly, if you are making the bread bowl, you might opt to buy a second loaf or the sweet rolls depending on how many people you are serving. Because, the cut out part of the loaf to make the bread bowl might not be enough.

**The picture and recipe are from here. (Tip: you don't even need to write the ingredients down or take a recipe to the store. This recipe is on the back of the vegetable soup mix packet;)

I make this recipe all the time as well! Now my friends expect me to bring this to our get togethers. The few times I haven't brought it, I've been asked why not. It's the best!
