Monday's Dinner

So, just call me Martha freaking Stewart this week. I've been attempting cooking up a storm! I made Air Force One meatloaf, corn and asiago bread pudding, and sweet peas on Monday night.  LC actually liked it! Yay!!!! A few of my twitter girls asked for the recipes, and here they are.


Air Force One Meatloaf

Ingredients:
1/2 cup chopped onions
1/2 cup of chopped bell pepper
2 Tbsp. butter
1 1/2 tsp. salt
1/2 tsp. pepper
2 eggs
2 tbsp. worchestershire sauce
1 cup bread crumbs
1 1/2 lbs. ground chuck*
1/2 lb. ground sausage*

Glaze:
1/2 cup ketchup
1 tsp. yellow mustard
3 tbsp. brown sugar 

Directions:
-Saute onions and bell peppers in butter to soften, and add the salt and pepper; set aside
-In a large mixing bowl, add eggs, Worchestershire sauce, bread crumbs, and mix together. Add ground chuck and sausage, combine.
-Place meat into a loaf pan, shape the loaf with your hands
-Mix ketchup, mustard, and brown sugar together and pour over the meat loaf
-Bake for about 45 min. to an hour at 350 degrees. Serves 4.**

*I omitted the sausage. We used a ground sirloin instead of chuck and sausage.
**It took this an hour to hit 160 degrees which is where you want ground beef. FYI 

Also, if you don't like a sweet glaze, you probably need to do something else. This is sweet, and I love it. However, LC on the other hand wasn't a big fan of the glaze. I LOVE brown sugar:)

The reason why I call this Air Force One meatloaf is because I copied this recipe from my local newspaper. The chef who gave this recipe to the paper was a chef on Air Force One(presidential airplane). He now resides in my hometown and is the personal chef to one of the local families. He said this meatloaf was Bill Clinton's favorite. 



Fresh Corn-and-Asiago Cheese Bread Pudding
recipe from Southern Living 

Ingredients:
1 1/2 cups milk
1 cup whipping cream
3 large eggs
1/2 tsp. salt
1/2 tsp. freshly ground pepper
1 (12oz.) French bread loaf, cut into 1-inch cubes (8 cups)
4 cups fresh corn kernels*
1 1/2 cups(6oz) shredded Asiago cheese

Directions:
-Whisk together first 5 ingredients in a large bowl; add bread, tossing to coat. Let stand 30 minutes. 
-Preheat oven to 375. Stir corn and cheese into bread mixture; spoon into a well-buttered 13x9 inch baking dish. Bake at 375 for 45 minutes or until set and golden brown. 

*It took me 5 corn husks to get this many cups.

On Tuesday, I tried to recreate my grandmother's chocolate pie. Recipe for DISASTER. God bless her; she is probably rolling over in her grave right now at the mere thought of what her pie turned out to be. I wish she was here to teach me all of these things. My gma passed when I was 16. She was the BEST cook:)

Thanks for sharing the recipes! Looks like it all turned out well on Monday. I also had a similar experience last Thanksgiving. I tired to cook my husbands grandmothers pecan pie recipe and it wouldn't cook!! Had to put it back in the oven twice and it still didn't cook. Don't feel bad... we have all been there! Better luck next time :)

what a great meal! That bread pudding sounds just like one a friend made for a lunch we had together a couple weeks ago! It was SO good!

Yum! I am going to have to try out the recipe. Keep trying your Grandma's recipe. You will get it sooner or later!
